Embracing the Green and Gold on Australia Day


Australia Day for me is about celebrating the amazing and diverse country we live in.  But it's also a day for having some fun, spending some time with mates, listening to Triple J's Hottest 100 and watching the Adelaide test.  


This Australia Day I decided to have a bit of fun with some food and created my own version of fish and salad that celebrates our sporting colours, green and gold!  





Fish with Green and Gold Salad (Serves 2)
This salad is simple but the combination of the herbs with the refreshing crunch of the cucumber compliment the sweetness of the cherry tomatoes.


What you will need
2 pieces of fish (I used Garfish, but any white flesh fish that is fresh or locally available would be fantastic to use)
2 cloves of garlic
2 tbs chopped dill
1 tbs chopped basil
1 Lebonese cucumber - diced
1 punnet of cherry tomatoes - halved
olive oil

  • Combine the cherry tomatoes, cucumber, basil and half the dill leaves in a boil and toss with a little bit of olive oil
  • place the fish on the grill skin side down and then sprinkle with finely chopped garlic and the remaining dill
  • turn the fish (cooking time will depend on the thickness of the fish, but should only take about a minute each side).
  • Serve a piece of fish with a generous portion of the Green and Gold salad and enjoy!
