Tors Cake





























Yes, it does feel a little indulgent to name a cake after myself - my husband started calling 
it Tors Cake and it stuck.  It's a little desert that has become a favourite in our home.  It's so simple that it's a great one to do with kids and they get to pick the flavours!  But it's also perfect for a single snack - or to enjoy it with a friend.  The base is gluten, dairy and sugar free and you can flavour it with almost anything! 



You will never look back, it takes 2-3 minutes to mix up and 4 minutes in the microwave.  Because there's natural fats in the coconut flour it will turn out of the mug or dish you are cooking it in and you can either serve it in the mug or on a plate.  It's also a great desert for any of you guys out there looking to impress your date with a desert that you made all by yourself!  



Base Recipe
1 Egg
1/2 cup water
1/4 cup coconut flour
1/2 tsp baking powder

How to make it
Mix the egg and the water in a big mug, then add the coconut flour, baking powder and any of the below flavours - or get creative and make your own flavours!  When it's all mixed together into a batter you want to cook it in a microwave for 4 minutes.  If it's still a little moist in the middle add another 30 seconds.  It might take a few tries to find out exactly the right timing for your microwave but start out with 4 minutes, then add 10 -20 seconds at a time until the cake is cooked through - you might want it a little soft in the middle (sometimes I do!).  

Chocolate and Peanut Butter
2 Tsp Peanut Butter
1/2 Banana
1 heaped tsp of either cacao powder or cacao nibs

Peach Cobbler
1 peach
1/2 tsp vanilla extract (the one without the glucose!)
1/2 tsp cinnamon

Apple and Cinnamon
1 apple
1/2 tsp vanilla extract (the one without the glucose!)
1/2 tsp cinnamon

Chocolate Mint
1 heaped tsp cacao and/or cacao nibs
1/4 tsp peppermint essence
1/3 banana

Vanilla and Blueberry
1/2 tsp vanilla extract (the one without the glucose!)
65g or 1/2 cup blueberries (canned, frozen or fresh)

Strawberry Shortcake
110g or 1 cup strawberries (fresh or frozen)
1/2 tsp vanilla extract (the one without the glucose!)

Black Forest
1/2 tsp vanilla extract (the one without the glucose!)
3/4 cup blackberries or cherries (canned, fresh or frozen)
1 tbs cacao powder

Banana and Coconut
1/2 Banana
1 tbs coconut flakes

Chocolate Banana
1/2 Banana
1 heaped tsp cacao and/or cacao nibs

Rum and Raisin
1/2 cup raisins
1/4 tsp rum essence
